Hump steak cooked in the pressure cooker, black beer and ginger with sautéed okra and chilli pepper.

Ingredients:

1 piece hump steak
1 big onion
1 garlic clove
1 bay leaf
50 grams ginger
40 ml canola oil
Salt and pepper
100 ml balsamic vinegar
700 ml black beer
355 ml light beer
8 well washed and dried okra
8 chilli peppers cut in half without seed
Canola oil

Method of preparation:

Brown all sides of the rib in a hot frying pan. Brown the hump steak in a very hot frying pan with canola oil, turning it on all sides.

Then put it in a pressure cooker along with the garlic, onion, ginger, bay leaves, vinegar and beers. Cover the pan and bring to low heat to cook for 40 minutes, when the meat should be tender. If necessary, cook a little more without pressure only with the lid. Remove the hump steak from the pan and set it aside. Remove the fat from the cooking broth and put add salt and pepper. Leave it to one side.

Okra and pepper:

Take a frying pan over high heat and heat well. Add the canola oil then add the whole okra and sauté it for 2 minutes, add the pepper for 30 seconds, season with salt.

Serving:

In a platter place the meat and pour the sauce over the okra and the pepper around the meat.
